Chipotle and Garlic Infused Olives
By Chef Jeremy Manley 'Southern California's Sustainable Chef'

There are many species and varieties of olives and if you are like me, I love olives. When I realized I could create a flavor combination to marinade my own olives, I began playing. Select random olives you may have never used before and start with an olives in a brining solution.

Ingredients
2 Cups of Olives (any variety will work)

3 Chipotle peppers and Adobe sauce (comes in a can that you can find at the grocery store or any Mexican market)

Juice of 1 Lemon

1 Tablespoon of fresh or dried Tarragon

1 Tablespoon of parsley fresh or dried

8 Cloves of crushed garlic

½ teaspoon of Caraway seeds

Method

Heat all ingredients together until flavors perfume the air with a strong aroma.
Transfer to a storage vessels and let sit for 1 week before eating to build maximum flavors.
These can sit in your refrigerator for up to 6 months. Enjoy!
